I have never done a giveaway on my blog before but there's a first time for evetrything.
After talking to a friend about eating healthier and possibly converting to a vegan diet I was told that I needed to read The Kind Diet by Alicia Silverstone. It was not only a how-to but a why-to as well. Silverstone shares her journey and her reasonings behind her lifestyle choices in addition to sharing tons of nommy recipes that are sooooooooo easy to prepare.
She lets you know that it's okay to do it in steps because gradually letting go of an animal-based diet is the best way to do it for most people. I quit cold turkey (pun TOTALLY intended) but to each her own.
If you are interested in becoming vegan or just looking to eat healthier meals with the absense of processed foods I totally recommend this book.
With that said I am giving away my copy of the book! I have read it and made note of my favorite recipes and now I'm passing it onto someone else because that's what good little vegans do.
This will be really easy. Leave a comment and tell me your favorite meal and what you can do to make it healthier and friendlier. You can only comment once. Because obviously.

- I'm a native Texan who doesn't eat meat. My husband is tall and my daughter is cute. I am loud but I'm shy. I write because I HAVE to write. I love heavy metal and wanted to name my kid "Metallica" but my husband vetoed it.

Saw that book in Borders and considered it! (But she's so thin and always has been I don't see why she would need to write a dieting book! Haha!) You're using that downloadable blog editor aren't you? Great stuff but I hate the watermarks it left. :(
I'm trying to cook healthier for my family so I've learned to substitute whole wheat pastas and grains like couscous in my former pasta dishes.
OOH! I've wanted to read this book for a while!
My favorite meal is stuffed peppers, and I cleaned them up by switching to extra-lean ground beef and brown rice instead of full-fat ground beef and white rice.
I think you could easily make them vegan by using beans and mushrooms instead of beef in the filler.
Hope I win this book! I've been thinking about buying it, but hi, I'm broke! :)

i've been struggling. maybe this would be a good book for me. dairy & cheese have been really hard for me to give up.
my favorite go-to meal is quesadillas. i've veganized them by removing the cheese & sour cream. instead i sautee whatever veggies i have (usually mushrooms, onions, cherry tomatoes & corn), then i smear on some refried beans, add the veggies and some salsa, heat it up, then top with homemade guacamole. i never miss the dairy in that one. :)
We make a lot of smoothies here. Sure they aren't vegan since I use yogurt in them. I add flax seed meal to them, and honey to sweeten them. Kids love them!
I want to get more meatless meals on our rotation.
my favorite is pizza with black olives and pineapple. I always order it with easy cheese, to let the sauce shine through. I need to make it healthier by trying the carry out kind w/no cheese, and adding Daiya or other vegan cheese myself.
I didn't know she wrote a book? I'd love to read it. I was vegan back in my late teens, and I'm oh so close to being vegan now, with the exception of the occasional bite of chicken.
My favorite meal is a loaded baked potato. I'd love to learn how to make my own vegan sour cream. Right now I buy it from the store, but, I bet I could make a version of it myself, huh? Using tofu? I wonder what else would need to go into it?
I totally met Alicia Silverstone once, by the way. It was weird. She was doing yoga backstage at a concert, haha.
My favorite meal for breakfast is a shake made w low fat chocolate milk and bananas. To make it healthier, I completely switched it up by using a handful of spinach, half a banana, some strawberries, a little water and ice. I like it as much as the chocolate one I'd drunk for ages and I know it's better for me. I REALLY want that book!
oo sounds like a terrific book I'd love to check out! I can't imagine life that way tho.. but I'd consider trying some of the meals out. Life without chicken.. who'd ever thunk it! LOL
I've really wanted to go vegan for a while now but I think I'm just too scared to let go of meat. It's so easy just to throw a burger on and call it good. Also, I think we are addicted to meat :( But now that I've had kidney stones twice in my life,I've been contemplating making the switch for good as meat and caffeine can be culprits. Maybe this book would give my the extra motivation to make our family vegan

One of my favorite meals is spaghetti. We use my husbands, great grandmas italian recipe but I guessing it's not so good for us. I could replace the noodles with spaghetti squash and replace the meat with a few different kinds of chunky vegatables and mushrooms.
I love chicken tetrazzini. I've recently switched to free range chicken only, but I think I'll make this meal with whole wheat pasta and extra veggies instead of chicken in the next week or two.
My all-time favorite meal is fried chicken wings and crinkle-cut fries with melted mozzarella on top. Not sure you can health that up at all. ;)
However, my 2nd favorite meal is kale sauteed with red peppers served over grits. I used to saute the kale in oil with a bit of smoked ham, but now I use vegetable broth. It actually tastes better!
I keep wanting to move us closer to veganism, so this would be a welcome read.

My favorite meal is baked ziti...I use whole wheat pasta but would love to make a meat free version.
My family has slowly been transitioning over to vegatarian diet. It's going well but a great how to with easy meals would probably be a HUGE help!
I've been trying to move towards using less meat in our meals as well. My problem is getting our kids to eat that way. My husband and I will eat just about anything. I've lost 22 pounds recently by eating more healthy and am interested in getting more healthy recipes to help in that process. I'd love to get this book!
